We are happy to announce that finally white truffle season has started. The Tuber magnatum has the most alluring aroma and taste. It reaches optimal maturity between late October and late December. It is brownish white and has a relatively, smooth surface(peridium). The colour of the flesh varies depending on the host tree, but lies in the range nut to cream.
All in all, this is the truffle variety in which the symbiotic partner is most strongly reflected. Thus the best specimens are harvested in the root system of oaks and lime trees. Unfortunately these stand only in Piedmont, with perhaps a few more in Lombardy, Veneto, Emilia Romagna and the Marches near Aqualagna. Annual production is currently a meagre 25 tons which makes it rare, and hence expensive – very very expensive.
