Caspian Caviar Caspian Gold Caviar 125g

A new take on our Golden Caviar theme. We had not expected to stock a farmed Chinese caviar, but this one really impressed us when we tasted it against some other Chinese caviars and two European Oscietras. It looks great, with a large egg of around 3.0mm and it is specially selected for its rich bronzey/golden hue.

It tastes as good as it looks, with a heavy buttery flavour and a long finish. The taste lingers long at the back of the mouth. If you fancy trying something different, this is the one for you.

This caviar is produced from hybrid sturgeon: Acipenser schrenckii x Huso dauricus.

China is the largest producer of caviar in the world. It has its own sturgeon species native to its large rivers, such as the Amur, which forms its northern boundary with Russia. Schrenckii and Dauricus are probably the two best known Chinese species, the latter being a very large sturgeon, not unlike a Beluga.

We have had concerns about the consistent quality of Chinese caviar. We source this caviar via a European Agent, who uses it to fulfill the largest airline contract in the world. This means that he is repacking it on an almost daily basis, so providing us with quality assurance.

What is Borax?
Borax, also known as Sodium borate, is a form of salt that is traditionally used in caviar production. It helps in the preservation process, improves consistency and also enhances the flavour.
