It may be tempting to lament the decline of wild caviar, but instead lets celebrate the rise of sturgeon farming and the improvement in skills and farming techniques. Without such an improvement, it simply would not be possible to offer you caviar of this quality at such a remarkable price.  

The eggs are similar in size to Oscietra, but are rather darker in colour, some verging towards black. The caviar is lightly salted and has a mild, clean taste. It is surprisingly complex, with flavours of the sea sprinkled with citrus undertones. Best of all, at this price, you can have lots of it!

We have taken a tasting tour of caviar from lesser known sturgeon breeds being farmed across Europe in the search of a quality, low cost caviar to offer to you as our House Selection. This caviar is derived from Siberian/Adriatic hybrid sturgeon, produced on a farm in Italy which is certified by Friends of the Sea.

At the lower end of the price scale, caviar can be rather a disappointing experience as it can be rather bland and tasteless. Some appears to be no more than the by-product of White Sturgeon meat production. This is not the case with our House Selection - the only complaint we have received is that it has too much complex flavour for a caviar of this price!

What is Borax?
Borax, also known as Sodium borate, is a form of salt that is traditionally used in caviar production. It helps in the preservation process, improves consistency and also enhances the flavour.

We offer a range of delivery options, which are listed on the order page. All UK caviar orders are sent out on a next day basis, excluding Sundays and Bank Holidays, on a fully trackable service. We need your order by 2.00pm if we are to deliver the following day. Your order will be packed with ice and delivered in an insulated box to ensure that it arrives with you in perfect condition.
 
Deliveries to the far north and south west of Scotland can take an additional day as Parcel Force transfer the delivery to Royal Mail. We will try to notify you if your order falls into this category.
 
Deliveries to the Scottish Islands can take as long as 4 days (Orkney & Shetland) so please bear this in mind when considering an order.
 
For specialist delivery options, such as same day delivery or within the hour in central London, please phone the office.
 
However hard we try, things can go wrong with a delivery. This will result from things beyond our control, such as van breakdowns, severe weather or road closures. In the event of non arrival, please contact the Home Deliveries team on 0845 606 8868 as soon as possible. We will do whatever we can to get your parcel delivered, but our success will rely on an early warning. Having been doing this for over 12 years, we do know our way around the systems.
