We have been working with the producers of this caviar for the last 4 years. They are lovely people who farm in a lovely place, and it is always a pleasure to go and visit. When we were there at the end of October, we tasted some caviar which was the test batch. It was really remarkably good.

Given that this was a test harvest, there was only a small quantity available and not enough for them to sell as a main product and you will recall that we offered it as a "Christmas Special". Well, plenty of you asked for more, so we have managed to source some more at the same crazy price, so stock up for Easter.

This caviar is harvested from a small batch of Transmontanus (White) sturgeon farmed in northern Italy. I am not normally very polite about caviar from this species as it tends to be rather tasteless and often bitter. This caviar is neither.

The eggs are a good size (c2.7mm) and are very black in colour. The egg definition is excellent, both on the eye and in the mouth. It has a good flavour, which does linger on the palate, with no trace of bitterness. A remarkably good caviar for this remarkable price.

What is Borax?
Borax, also known as Sodium borate, is a form of salt that is traditionally used in caviar production. It helps in the preservation process, improves consistency and also enhances the flavour.

We offer a range of delivery options, which are listed on the order page. All UK caviar orders are sent out on a next day basis, excluding Sundays and Bank Holidays, on a fully trackable service. We need your order by 2.00pm if we are to deliver the following day. Your order will be packed with ice and delivered in an insulated box to ensure that it arrives with you in perfect condition.
Deliveries to the far north and south west of Scotland can take an additional day as Parcel Force transfer the delivery to Royal Mail. We will try to notify you if your order falls into this category.
Deliveries to the Scottish Islands can take as long as 4 days (Orkney & Shetland) so please bear this in mind when considering an order.
For specialist delivery options, such as same day delivery or within the hour in central London, please phone the office.
However hard we try, things can go wrong with a delivery. This will result from things beyond our control, such as van breakdowns, severe weather or road closures. In the event of non arrival, please contact the Home Deliveries team on 0845 606 8868 as soon as possible. We will do whatever we can to get your parcel delivered, but our success will rely on an early warning. Having been doing this for over 12 years, we do know our way around the systems.
