One of my annual tasks is to source Sevruga which is good enough to offer to you. Strangely, this is not as easy as it sounds, with Sevruga being the hardest caviar to farm succesfully. Even our favourite producers struggle to produce it with the required egg definition. I was offered this Sevrugaa month or so ago by an Iranian friend of mine. We decided that it was excellent, but rather expensive. But after a couple more tastings of disappointing samples from elsewhere, a deal was done. Dont delay as we have not got a great stock.

The eggs are small and grey, but they are well defined, both on the eye and in the mouth. The caviar has a fantatstic flavour. This is real Sevruga - Stellatus rather than Ruthenus. It does actually originate from a farm in northern Italy, but not the same farm as we used last year

Sevruga Caviar has a much smaller egg than the mighty Beluga Caviar, but what it lacks in egg size, it makes up for in flavour. It is often described as the "connoisseur's caviar" due to its stronger flavour. This is a punchy example which does not do subtle nuances. It grabs your taste buds and gives them a good, caviar flavoured, slap.
Try it along side one of our other caviars and you will really taste the difference. It is ideal for serving with the traditional accompaniments and for canapes as a small quantity gives a flavour that stands up well with other ingredients.

What is Borax?
Borax, also known as Sodium borate, is a form of salt that is traditionally used in caviar production. It helps in the preservation process, improves consistency and also enhances the flavour.

We offer a range of delivery options, which are listed on the order page. All UK caviar orders are sent out on a next day basis, excluding Sundays and Bank Holidays, on a fully trackable service. We need your order by 2.00pm if we are to deliver the following day. Your order will be packed with ice and delivered in an insulated box to ensure that it arrives with you in perfect condition.
Deliveries to the far north and south west of Scotland can take an additional day as Parcel Force transfer the delivery to Royal Mail. We will try to notify you if your order falls into this category.
Deliveries to the Scottish Islands can take as long as 4 days (Orkney & Shetland) so please bear this in mind when considering an order.
For specialist delivery options, such as same day delivery or within the hour in central London, please phone the office.
However hard we try, things can go wrong with a delivery. This will result from things beyond our control, such as van breakdowns, severe weather or road closures. In the event of non arrival, please contact the Home Deliveries team on 0845 606 8868 as soon as possible. We will do whatever we can to get your parcel delivered, but our success will rely on an early warning. Having been doing this for over 12 years, we do know our way around the systems.
