This caviar comes from Siberian sturgeon. This example comes from the same farm in Italy that produces our highly acclaimed Oscietra and reflects the same quality. Which will you prefer? The Sibirskye gives a wonderful burst of flavour on the front of the palate, but perhaps does not linger as long as the Oscietra.
 
NEWS: In Autumn 2016, this caviar was entered into a blind tasting in Switzerland, judged by 4 top Chefs. It was up against 6 other caviars from Siberian sturgeon that are available in Switzerland. The Swiss eat more caviar than any other European nation, so they know a bit about it. It won.

This caviar comes from Siberian sturgeon. This example comes from the same farm in Italy that produces our highly acclaimed Oscietra and reflects the same quality. Which will you prefer? The sturgeon, and caviar, benefit from the constant flow of water at a constant temperature. The diet is also strictly formulated and controlled. Harvesting takes place twice a year. Processing is carried out skilfully and quickly to seal in the flavours.
 
The Siberian (Baerii) sturgeon is a mainstay of the caviar farming industry. It is used by many farms due to its excellent taste, appearance and relatively short time to harvest. The eggs are a similar size to Oscietra, and tend to be dark brown, verging towards black. Due to the quality of the caviar, it is often labelled to give the impression that it comes from a better known sturgeon. Here at Caspian Caviar, we believe that this is too good to disguise, so we offer you "SIBIRSKYE".

What is Borax?
Borax, also known as Sodium borate, is a form of salt that is traditionally used in caviar production. It helps in the preservation process, improves consistency and also enhances the flavour.

We offer a range of delivery options, which are listed on the order page. All UK caviar orders are sent out on a next day basis, excluding Sundays and Bank Holidays, on a fully trackable service. We need your order by 2.00pm if we are to deliver the following day. Your order will be packed with ice and delivered in an insulated box to ensure that it arrives with you in perfect condition.
 
Deliveries to the far north and south west of Scotland can take an additional day as Parcel Force transfer the delivery to Royal Mail. We will try to notify you if your order falls into this category.
 
Deliveries to the Scottish Islands can take as long as 4 days (Orkney & Shetland) so please bear this in mind when considering an order.
 
For specialist delivery options, such as same day delivery or within the hour in central London, please phone the office.
 
However hard we try, things can go wrong with a delivery. This will result from things beyond our control, such as van breakdowns, severe weather or road closures. In the event of non arrival, please contact the Home Deliveries team on 0845 606 8868 as soon as possible. We will do whatever we can to get your parcel delivered, but our success will rely on an early warning. Having been doing this for over 12 years, we do know our way around the systems.
