A Sustainable Oscietra Caviar, which has the Latin name of Gueldenstaedtii is farmed in Bulgaria, Germany, Italy, Belgium and France. However, it is amazing how the flavours vary from country to country although it is the same type of Sturgeon.
Oscietra's good sized egg makes it very impressive to the eye. The eggs are about 2- 3mm diameter with a colour varying from a rich golden brown to dark tobacco brown. Oscietra has a mellow nutty flavour, which is not disimilar to mature Brie.
