This fantastic Extra Virgin Olive Oil is produced by the Gonzales family on their small farm just outside Seville in south west Spain. After a break of two generations, the family are again making oil from their ancient Arbequina olives. However, the young Gonzaleses did not want to utilise the very latest mechanical techniques, but instead they sought out how the older generations once made their oil.
Hence the olives are picked by hand in the cool of the dawn, with the oil being produced entirely on site. The fruit is cold pressed (not cold extracted) and pressed through capachos discs. These woven fibre discs are often seen on the walls of bars and restaurants but nearly nobody can risk the cost of using them anymore!
The result is a glorious vivid green oil that has wonderful fruity aromas and tastes, with hints of banana, apple and tomatoes. It is wonderful on its own with good bread to dip, and fantastic in dressings. Just dont put it in the frying pan!
It is bottled in a stylish ceramic bottle to shield it from the light, and sealed with a cork stopper with a leather thong. All the packaging is made in Andalucia. The result is a wonderful gift and a great addition to you kitchen.
