This is really rather a wonderful olive oil from what is very much a family estate in Sicily - just look at the olive picking picture! I could tell you all bout it bit I will leave it to Charles Quest-Ritson, who is some sort of big nose in the world of olive oil. He reviewed this oil in December:

Racalía's olive oil from 2021 is a triumph - the result of good cultivation, careful harvesting and sophisticated techniques of milling and pressing. Even before tasting it, the quality of Racalía's 2021 olive oil is clear from its richly vegetable aroma, with hints of tomato, banana and artichoke. It is unusual for an oil to have such a strong and harmonious smell.

The flavour of an olive oil depends on many factors, but ultimately it comes down to the choice of olive varieties from which it is made. Western Sicily - the area known as the Valli Trapanesi - is fortunate in having native varieties of exceptional quality, selected by many generations of successful olive-growers. Biancolilla, Cerasuola and Nocellara del Bélice are the best, and all are present in the oil of Racalía.

The taste of Racalía's oil is unusually long on the tongue - a sure sign of quality - with tomatoes, grass and fresh walnuts to the fore, plus a lighter suggestion of pears and Mediterranean herbs. We call this overall flavour 'fruitiness' and Racalía's 2021 harvest has it in abundance - medium-light in its intensity, not at all aggressive, just beautifully balanced and, frankly, delicious.

The initial taste of Racalía's 2021 oil is followed by a lightly bitter aftertaste. This persists at the back of the tongue, alongside a gentle, warming sense of pepperiness. To qualify as a truly great oil, these three qualities - fruitiness, bitterness and pepperiness - must be present, co-exist in a harmonious whole, and linger for a long time in the mouth. I have seldom tasted such a good example - near-perfect.

The oil will be slightly hazy at first, because has not been filtered. It will however clear to a bright transparent gold by natural precipitation. This process is preferred by many organic producers and their consumers.

Olive oils must undergo technical analysis before they qualify as 'Extra Virgin'. The tests carried out on Racalía's 2021 oil confirm its excellence. Professional tasters mark an oil out of 10. I put Racalía's 2021 oil at 9/10, for its sheer quality - balance, freshness and simple deliciousness.

What more could I possibly add?
