This is a really exciting new product. The egg size is just a bit smaller than the trout but they are a lovely yellow colour, with a wonderful flavour to match. We introduced it to the UK at the Speciality Fine Food Fair in early September 2012. It had a very positive response from all who tasted it, whether they were retailers, caterers or restauranteurs. The Arctic Char is thought to be rather a relic of the last Ice Age, and has more of a skin than scales, not unlike sturgeon. It looks rather like trout and can be found in the deep lochs of Scotland and the deep lakes of England and northern Europe. Further north, in places like Iceland and Greenland, it can be prolific and is not landlocked. Arctic Char can be found in the rivers and will migrate from the sea to spawn, not unlike our salmon and sea-trout. It is found in Germany, where it is known, not surprisingly, as Bavarian Char. This product originates from a farm in the Bavarian Alps, which we believe to be the only one of its kind in the world.
