You have a fridge – Use It!

If I had a penny for every time that I get asked at this time of year “How long can I keep caviar in the fridge?” I might be able to buy a finger of fudge. But we do really get many queries regarding when is the best time to book a Christmas delivery.

Perhaps we should get more queries because our most frustrating customer is the one wanting delivery on Christmas Eve. It does not seem to occur to them that the entire courier system is rather stretched at that point in the year and that it leaves us very limited opportunity to put things right if there is a glitch in delivery. Why leave it so late and take the risk of no caviar at Christmas?

This year, the calendar does not make it easier for us, with Christmas falling on a Wednesday. With little delivery time in Christmas week, the week before will be manic. I would recommend that people plan delivery for early in that week, say Tuesday the 17th, or even better, the week before.

Yes, caviar will keep in your fridge nearly as well as it will keep in ours. We store at -2C, while a domestic fridge runs at around 5C, so it is not ideal long term storage, but perfect for 3-4 weeks. I always recommend that our caviar is stored at the back of the fridge where it is coldest and less likely to suffer from temperature fluctuation when the door is opened.

So book your delivery early in December, get it in the fridge and then we can all relax just a little bit more.
