Caviar From Afar
One of the nice parts of this job is being approached by people wanting to sell me lovely things. This is particularly good when free samples are offered. Though sadly this is never often enough or large enough!
Some approaches are much more straightforward than others. We ideally like a well established farm in western Europe that we can visit easily. I have been talking to one that thinks it is in Russia, but is not. By the time you read this post, it may well be! I am not inclined to visit.
Recently, there has been a few approaches from people selling Iranian caviar. Sounds good, but quite a bit of it isnt and how am I to know who I am dealing with or what he is really selling me? We have had a couple of offers where the seller planned to import it in his suitcase on an ordinary commercial flight. We were not tempted.
Shortly we are going to post a new caviar. it is farmed in China which is a break with our normal western European approach. China is probably the world’s largest producer of caviar and some of it is very good indeed, but we have always had worries over consistent quality. This caviar we are getting via an agent in Europe who handles a great deal of it, so we can be confident of the quality.
We liked it very much when we tasted it against various other caviars. But will you, our customers? If you do like it, we will keep it. If not, we will drop it and seek out something else, which is always fun.
